CHICKEN & GREEN CHILE FLAUTAS for the SUPERBOWL


CHICKEN & GREEN CHILE FLAUTAS
3 cups cooked and shredded rotisserie chicken
6 ounces cream cheese, softened
1/3 cup sour cream
1 can original Rotel tomatoes and chiles, drained VERY well
1 small can green chiles, drained VERY well
1 bunch green onions, sliced lengthwise and then again in half moons
sea salt and pepper, to taste
1 1/2 cups shredded Cheddar and jack Mexican mix cheese
6 inch flour tortillas
Canola oil for frying
Salsa, sour cream, guacamole and taco sauce for dipping
  • In a large bowl combine the chicken pieces, cream cheese, sour cream, Rotel tomatoes and chiles and shredded cheese until well blended.
  • Fill each tortilla with two heaping tablespoons of chicken mixture towards one side and then roll tightly.  Place seam side down on a platter.  DO NOT begin frying until they are all filled.  
  • Add enough oil to a large skillet to generously cover the bottom.  Heat to medium.
  • Cook tortillas seam side down and then turning to brown all the way around.
  • DO NOT crowd the pan.
  • Drain on paper towels.
  • Serve with your favorite sauces.

Having a game day buffet just makes it more festive!  I remember when I was a kid, My dad was a big LOS ANGELES RAMS fan. We always watched the games together and I was responsible for keeping the game food fun. I loved spending the day with my dad and it was always so much fun.

Martha over at Seaside Simplicity began Tailgating Time and it's just plain fun not to mention a wonderful source for new recipes to try.  We will repost the linky on or around the first of each month as a reminder.

BAKED HAM & SWISS SANDWICHES

I wish I could tell you where I saw this recipe, but I can't.  I did adapt it slightly, but it really makes the perfect football food - quick, easy and tasty. 
BAKED HAM & SWISS SANDWICHES
12 pack of KING'S Hawaiian rolls
4 slices thick ham, quartered (to fit on rolls)
4 large slices Swiss cheese, quartered (to fit on rolls)
1/3 cup butter
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
  • Slice rolls in half and layer pan with bottom halves.*
  • Place a slice of ham and Swiss cheese on each roll.
  • Put the tops on.
  • In a small saucepan melt the butter.
  • Add the Worcestershire sauce and seasonings and blend well.
  • Brush the tops of each roll.
  • Cover with foil and refrigerate over night.
  • Preheat oven to 375°.
  • Bake 15-20 minutes.
  • Serve immediately!  They are best hot.
As an added bonus they are really good as a "club" adding turkey as well to the ham.

*Original recipe called for using a 9x13 pan.  I used my lasagna pan and it worked out very well.

This is what we're having tonight, Mozzarella Bites and you can find the recipe here. This time I cut the wonton wrappers and string cheese into 4 pieces each to make bite size pieces.

Tomorrow night is the Hall of Fame game, the kick off to NFL preseason football! I'm making up 2 new tailgating recipes tomorrow - one for NASCAR in the morning and another to celebrate the beginning of FOOTBALL tomorrow night.

PARTY MEATBALLS

These are a great recipe for a potluck or buffet.
I always make too much on purpose because the leftovers freeze so well.
MEATBALLS*
2 pounds ground beef
1 large onion, finely minced
1/2 sleeve saltine crackers, crushed
1 teaspoon minced garlic from the jar
1/2 teaspoon white pepper
1 jumbo egg, beaten
  • Preheat oven to 375 degrees.
  • In a large bowl, combine all the meatball ingredients and blend well.
  • Shape into 1 inch balls.
  • Place meatballs on un-greased cookie sheet.
  • Bake 25-30 minutes until browned and baked through.
  • For frozen meatballs, put the sauce in the crock pot first and then stir in frozen meatballs. They'll be ready in 3-4 hours.
*I sometimes cheat and buy the bags of meatballs from Costco or Sam's Club

SAUCE
3/4 cup cranberry sauce**
3 tablespoons white vinegar
1 3/4 cups Heinz chili sauce
1 medium red bell pepper, cut into thin slivers
  • In a large saucepan combine jelly, chili sauce and vinegar.
  • Bring to a soft boil and simmer 5 minutes stirring constantly to prevent scorching.
  • Layer meatballs, peppers and spicy sauce in crock pot.
  • Warm meatballs in sauce for 3-4 hours before serving.
**I always have some leftover from Thanksgiving or Christmas at this time of year.

You can put all the leftovers in the freezer together. Be sure to thaw them thoroughly before reheating.
